White Chocolate Irish Cream Mousse
So I had around 1 cup of white chocolate chips and I knew I had around 1 1/2 cups of heavy whipping cream. It’s basically that easy. I did add a few other things we have in most of our kitchens, like some butter. Now I also had Baileys Irish Cream Coffee Creamer. I melted my white chocolate, butter, irish cream in a metal bowl over a simmering pan of water, like a double boiler. Stirring frequently so it does not burn, once it’s smooth and melted nicely remove from heat and COOL COMPLETELY! This cannot be warm in the least bit! Must be cool! I took 1 1/2 cups of the heavy whipping cream in my mixer, added a splash of irish cream to the mix and around 3 tbsp of powder sugar. I mix until it is thick and fluffy and it holds it shape pretty much, if you make a peak it stays. FOLD, do not stir 2/3 of the whipped cream in to the white chocolate mixture until completely mixed then fill dishes and top with remaining whipped cream like I did filling dish evenly across the top of dish. I dusted with bakers cocoa in a heart shape for my loves 🙂
