I found a recipe online for homemade white enchilada’s and it they were so good! It was really simple. All I used was 13×9 glass pan, Chicken I previously cooked and shredded, 8 – 10 pack burrito shells, 1 lb brick monterey jack cheese, 3 tbsp flour, 3 tbsp butter, 1.5 cups chicken broth and 1 cup sour cream. I grated the cheese and mixed half cheese with the chicken and then filled the shells and rolled them up. I placed them in lightly greased pan. Then in a saucepan melt the butter and add the flour making a rue. Then I added the chicken broth making a gravy like sauce. Then I turned off the burner and added the sour cream mixed until smooth. Then ladle sauce over the enchiladas and top with remaining cheese. Bake for 25 minutes @ 350, then broil for 3 minutes to make cheese turn all golden brown.
